Goat Cheese & Fruit Crostinis


You guys, I found the easiest recipe - and it tastes good, too! Enter the goat cheese and fruit crostini.

I'm by no means a chef, although I can make a mean microwaved pizza, but even I can pull of these bite-sized apps. And the best part? They look fancy so when I made them people were totally impressed. Plus, if you have leftovers, cover and refrigerate ad they still tasted good two days later.

So let's get to it with the recipe!

INGREDIENTS
8oz. soft goat cheese
1 baguette
2 tbsp. of honey + extra to drizzle
Fruit of your choice

DIRECTIONS
Cut baguette into half-inch slices
Pre-heat oven to 350° and bake baguette slices for 10-12 minutes
While baking, mix goat cheese with honey and prep fruit
Once baguettes are cool, spread goat cheese mixture then top with fruit and drizzle with honey

TOTAL PREP AND COOK TIME: 20 minutes

Super easy right?

I chose to use strawberries, raspberries, blackberries, and peaches. The peaches were the most tasty.

Next time you need to provide an hors d'oeuvres, I highly recommend this one!

Grilled Banana Boat Recipe

Grilled Banana Boats

Grilled banana boats aka banana marshmallow chocolate goodness! I'm not a big cook - unless you consider microwaving acceptable - so when I came across this easy recipe I was excited to try it out. Let's get to it!

Ingredients:
firm banana(s)
chocolate chips
marshmallows (small)

Cooking Directions:
Heat grill to medium or oven to 450°
Cut a lengthwise slit into banana (do not slice all the way through)
Fill slit with marshmallows and chocolate chips
Wrap banana in foil, sealing at top, leaving two to three inches of space at top
Place banana(s) on grill and cover for 8-10 minutes or in oven for 15-20 minutes
Once marshmallows are melted, boats are ready

This is a nice, light dessert that'll satisfy your sweet tooth without making you feel guilty for indulging!

POM Cocktails


Summer may be coming to a close but there's still time to savor the tastes of the season. Today I have an easy go-to cocktail recipe for those long days and warm nights - POM Wonderful Juice mixed with flavored Bacardi Rum. It's fruity, refreshing, and ridiculously easy to make.

Mix one 8oz. container of POM juice with a 50ML mini bottle of flavored Bacardi. Raspberry, blueberry, pineapple, they all taste great with the pomegranate juice. Because both bottles are so compact this is a great drink to take with you to a BYOB BBQ or a trip to the pool.

Pink Popcorn

Looking for a fun idea for a Valentine's Day treat? Try pink popcorn!


Here are the ingredients you'll need to whip up a batch of this perfectly pink snack:

12 cups of unsweetened popcorn
2 cups of mini marshmallows
1/2 cup of butter
1 package of strawberry gelatin


Cooking Directions:

1. Heat butter and marshmallows in a sauce pan until the marshmallows are almost melted.
2. As the butter and marshmallows are cooking, pop the 12 cups of popcorn (about 3 bags).
3. Pour the melted butter and marshmallows over the popcorn and stir.
4. Pour the packet of gelatin mix over the popcorn and stir.

Total cooking time: 10 minutes

Total cost of ingredients: Under $6 (I bought generic items)

Kern's Smoothie

If you're looking for a quick and easy smoothie recipe, I've got it! All you need is a can of Kern's Apricot and a handful of strawberries, pineapples and strawberries. Literally, just mix the three up in a blender and you're done. And it tastes so good!

What's great about this smoothie is you can add anything you want to the recipe depending on the fruit you like. If you prefer flavors on the tart side, only use 3/4 of the juice can. But if you'd rather it not be sour, use the whole can and/or add bananas or blueberries.
